Mav's Reuben

 Recipe inspired by subscriber, Aiden!


Ingredients:

  • Rye bread, two slices
  • Corned beef (prepackaged or homemade) - approx. three ounces
  • Swiss cheese, two slices
  • Sauerkraut (pickled cabbage) - any jarred brand you like! - approx. three tablespoons
  • Butter or olive oil
  • Thousand Island Dressing : bottled or mixed together. (Equal parts mayo, ketchup, and relish)

“Breaking out the cast iron, because I don’t want to mess this sandwich up.”

If you have one, great!  If not, a non-stick pan will do just fine.

 

1. Toast two slices of rye bread in a hot cast iron skillet, with olive oil or butter.  
2. Pile slices of corned beef and sauerkraut onto one slice of bread, and add slices of swiss cheese! (Trick to melt the cheese?  Add a lid!)
3. Toast it golden brown. (Less than I did)  
4. Spoon dressing into the sandwich once cooked.  
5. “Cut it diagonally - it just feels better.”  

 

“My dad was a Reuben guy - that sandwich is so good.  Reubens are weird, they have everything on them is kind of sour - everything together, it all compliments itself.  I’m telling you, if you like a Reuben sandwich, you’ll probably like a sauerkraut and sausage pizza.  It’s a solid 8 and a half!” - Mav

Mexican Style Omelette (From the UK)

Ingredients:
3 eggs
1/2 red onion
3 large tomatoes/ a punnet of cherry tomatoes
Fresh Choriander (cilantro)
1 Lime
Bacon
Cheese (grated)
Sriracha

dice the onion and tomatoes and choriander (cilantro) and mix, then add the juice of your lime then set aside.

Add 3 eggs into bowl and whisk, add salt and pepper to taste.

cook bacon to liking then remove from pan.

add egg mix to pan and cook omelette. add the cheese when nearly cooked. add bacon once cooked and fold omelette over.

plate up omelette and add the onion/ tomato salsa on top.

Finish with a generous drizzle of sriracha on top and enjoy!

Hey Mav! Try something sweet and delectable like some homemade donuts!

Ingredients:
Vegetable Oil (to fry)
Pillsbury biscuits (the original, nothing special)
Powdered sugar or cinnamon

Make donuts out of the dough, or make donut sticks! Whatever suits your fancy! Really good and easy to make treat. Thanks! I hope you enjoy as it’s my favorite.

A good quick meal is what I had survived on while couch surfing after a divorce. I’d grab me a bag of mozzarella cheese and large burrito soft shells and a bag of pepperoni and literally make my a pizza quesidilla minus the sauce. You could add the sauce as well if you like. I would nuke mine in microwave for a minute as I didn’t have stove access at the time, but would be awesome fried up.

Also grab you some ham hocks and some split peas, and make you some split pea soup. Very warm and filling meal as well as it gets colder out.

I love sauerkraut and when you were making that sandwich, I swear I could actually smell it cooking! Good Job, Mav! wondering if you had any formal training to learn to cook??? You really make great dishes!
